Roast autumn apple chops

Ingredients


10 ml (2 tsp.) butter
4 duBreton center cut pork chops, bone-in (French style), 2 à 2,5 cm (3/4 to 1 inch) thick
2 large tart apples, cored, peeled and thinly sliced into rounds
5 ml (1 tsp.) dried sage
5 ml (1 tsp.) dried thyme
Freshly ground black pepper
125 ml (1/2 cup) apple cider
  1. Heat oven to 230°C (450°F).
  2. In ovenproof skillet, melt butter over medium-high heat.
  3. Brown chops well on both sides, about 2 1/2 minutes per side.
  4. Remove chops and set aside.
  5. Layer apples in bottom of skillet and top with chops.
  6. Sprinkle with herbs and a generous grinding of pepper.
  7. Pour cider over the top.
  8. Roast in oven for 15 minutes more.
  9. Serve immediately.
