- Heat oven to 230°C (450°F).
- In ovenproof skillet, melt butter over medium-high heat.
- Brown chops well on both sides, about 2 1/2 minutes per side.
- Remove chops and set aside.
- Layer apples in bottom of skillet and top with chops.
- Sprinkle with herbs and a generous grinding of pepper.
- Pour cider over the top.
- Roast in oven for 15 minutes more.
- Serve immediately.
