Ingredients


15 ml (1 tbsp.) cider vinegar
10 ml (2 tsp.) Dijon-style mustard
10 ml (2 tsp.) maple syrup
3 ml (1/2 tsp.) hot pepper sauce
4 duBreton center cut pork chops, bone-in (French style), 2 à 2,5 cm (3/4 to 1 inch) thick
Blue cheese, optional
  1. Prepare a medium-hot fire in kettle-style grill.
  2. In small bowl stir together vinegar, mustard, maple syrup and hot pepper sauce; rub sauce on both sides of pork chops.
  3. Grill chops over direct heat, turning as needed to brown evenly, about 10 to 12 minutes.
  4. Serve immediately, topped with crumbled blue cheese, if desired.
