- Season chops with salt and pepper; set aside.
- In small bowl stir together preserves, lime juice, mustard, ginger, garlic and soy sauce.
- Heat oil in large nonstick skillet over medium-high heat; brown chops on both sides.
- Lower heat, pour pineapple mixture over chops, cover and simmer for 8 to 10 minutes.
- Serve immediately.
