Ingredients


4 duBreton center cut pork chops, bone-in (French style), 2 cm (3/4-inch) thick
1 ml (1/4 tsp.) salt
1 ml (1/4 tsp.) freshly ground black pepper
125 ml (1/2 cup) pineapple preserves
23 ml (1 1/2 tbsp.) lime juice
15 ml (1 tbsp.) Dijon-style mustard
8 ml (1 1/2 tsp.) ground ginger
1 garlic clove, crushed
5 ml (1 tsp.) soy sauce
10 ml (2 tsp.) olive oil
  1. Season chops with salt and pepper; set aside.
  2. In small bowl stir together preserves, lime juice, mustard, ginger, garlic and soy sauce.
  3. Heat oil in large nonstick skillet over medium-high heat; brown chops on both sides.
  4. Lower heat, pour pineapple mixture over chops, cover and simmer for 8 to 10 minutes.
  5. Serve immediately.
