Grilled pork chops with spicy steak butter

Ingredients


125 ml (1/2 cup) (1 stick) unsalted butter, room temperature
1 crushed garlic clove
5 ml (1 tsp.) seasoned salt
30 ml (2 tbsp.) bottled steak sauce
5 ml (1 tsp.) liquid smoke seasoning
5 ml (1 tsp.) hot pepper sauce
20 ml (4 tsp.) ground black pepper, plus extra for seasoning the pork
1 ml (1/4 tsp.) ground red pepper
3 scallions, minced, including some of the green tops
8 duBreton center cut pork chops, bone-in (French style) about 180 g (6 ounces) each
  1. In medium bowl, beat together butter, garlic, seasoned salt, steak sauce, liquid smoke, hot pepper sauce, black pepper, red pepper, and scallions; cover and refrigerate until firm.
  2. Prepare medium-hot fire in grill.
  3. Season chops to taste with coarsely ground black pepper; grill chops over direct heat, turning once, until just done (meat thermometer inserted will read 70-80°C (150-155°F.)), about 4 minutes on each side.
  4. Top each chop with a tbsp. of chilled butter mixture.
