Honey-curry glazed pork roast

Ingredients


680-908 g (1 1/2 to 2 pounds) duBreton pork roast loin center cut  (boneless)
3 ml (1/2 tsp.) salt
3 ml (1/2 tsp.) freshly ground black pepper
45 ml (3 tbsp.) honey
45 ml (3 tbsp.) coarse-ground prepared mustard
15 ml (1 tbsp.) vegetable oil
10 ml (2 tsp.) curry powder
  1. Heat oven to 215°C (425°F).
  2. Season roast on all surfaces with salt and pepper; place in shallow roasting pan and roast for 20 minutes. Meanwhile, in small bowl combine honey, mustard, oil and curry powder.
  3. Lower oven temperature to 180°C (350°F).
  4. Brush pork with honey glaze.
  5. Continue to roast until internal temperature of pork, measured with a meat thermometer, reaches 70-75°C (150 to 155°F), about 20 minutes more.
  6. Remove from oven and let sit for 5 minutes before slicing to serve.
