- Heat oven to 215°C (425°F).
- Season roast on all surfaces with salt and pepper; place in shallow roasting pan and roast for 20 minutes. Meanwhile, in small bowl combine honey, mustard, oil and curry powder.
- Lower oven temperature to 180°C (350°F).
- Brush pork with honey glaze.
- Continue to roast until internal temperature of pork, measured with a meat thermometer, reaches 70-75°C (150 to 155°F), about 20 minutes more.
- Remove from oven and let sit for 5 minutes before slicing to serve.
