Pork stir-fry with peanuts and basil

Ingredients


250 ml (1 cup) snow peas with ends snapped off and cut into thin strips
60 ml (4 tbsp.) vegetable oil
125 ml (1/2 cup) onion, finely chopped
125 ml (1/2 cup) red pepper, cut into thin strips
500 g (1 lb.) boneless pork chop, cut into small pieces
30 ml (2 tbsp.) green curry paste
60 ml (4 tbsp.) fish sauce
15 ml (1 tbsp.) brown sugar
125 ml (1/2 cup) basil leaves, minced
125 ml (1/2 cup) unsalted peanuts, finely chopped
  1. In a saucepan, boil some water, blanch the snow peas and then rinse them under cold water immediately.
  2. Heat the wok to a high temperature. Pour the oil into the pan and add the onion, snow peas, red pepper and pork.
  3. Stir in the green curry paste, fish sauce, brown sugar, basil leaves and half of the peanuts.
  4. Stir throughout cooking, transfer to plates and sprinkle the other half of the peanuts over the dishes.
