Pork shoulder boneless roast with bacon, pear and fennel

  • 1  Pork shoulder roast
  • 6 – 8 slices of bacon
  • 2 tbsp. of fresh thyme leaves
  • 1 tbsp. of fennel seed
  • 2 tbsp. of Dijon mustard
  • 1 tsp. of salt
  • 1 large onion, cut into thin wedges
  • 1 fennel bulb, quartered
  • 4 apples or pears, peeled and quartered
  • ½ c. of apple cider or white wine
  • ¼ c. of maple syrup


  1. 1.Preheat the oven to 350°F.
  2. 2.In a rectangular oven-safe dish*, mix the onion, fennel, tomatoes, pears, maple syrup and cider and season with salt and fresh-ground pepper. * If using a Pyrex dish, line with a sheet of parchment paper first.
  3. 3.Coat the pork pieces with a mixture of the Dijon mustard, thyme and fennel.
  4. 4.Then cover with the bacon slices.
  5. 5.Place in the casserole on the bed of vegetables.
  6. 6.Bake for approximately 3 hours. Cover with aluminum foil if desired.
