  • 1 package of 4 duBreton Organic Mild Italian Sausages
  • 1 lb. green beans
  • 1 lb. Crimini mushrooms, thinly sliced
  • 1 tsp. Dijon mustard
  • 2 Golden Delicious apples, julienned
  • ½ cup roasted pecans
  • ¾ cup sultana raisins
  • 1 shallot, finely chopped
  • 2 tbsp. red wine vinegar
  • 2 tbsp. grape must
  • ¼ cup olive oil
  • Freshly ground salt and pepper


  1. 1.Blanch the green beans in boiling salted water 4 to 5 minutes. Remove beans and cool in ice water. Drain, dry thoroughly and place in a salad bowl. Add the rest of the salad ingredients to the green beans.
  2. 2.In the same water, blanch the sausages 5 minutes. Dry thoroughly and fry with olive oil in a pan. Remove and keep warm.
  3. 3.For the dressing, mix together the mustard, red wine vinegar and grape must, then add olive oil gradually while mixing with a whisk.
  4. 4.Pour the dressing into the salad bowl.
  5. 5.Mix well and season with freshly ground salt and pepper.
  6. 6.Arrange the sausages around the edges of the salad bowl.


For a taste a little spicy, it is possible to replace the Mild Italian Sausages with Hot Italian Sausages.
