Smoked negroni

Smoked Negroni


  • 1 slice duBreton Bacon
  • 1 tsp. (5mL) grated orange zest
  • 1 strip orange zest
  • 3/4 oz. Campari (Optional: Bacon Fat Wash Campari, recipe follows)
  • 3/4 oz. Gin
  • 3/4 oz. Sweet Vermouth


  1. Preheat oven to 375°F (190°C). Place bacon on a parchment paper covered rack over a small baking sheet. Bake for about 8 minutes, or until fat is starting to render out of bacon strip. Remove from oven, sprinkle orange zest over top of bacon slice. Set strip of orange zest on the parchment paper and return to oven. Bake until bacon is just crisp, about 8-10 more minutes. Let cool.
  2. Half fill a rock glass with ice cubes. Add Campari, Gin and Sweet Vermouth and stir to combine. Top with bacon and orange strip to serve.


Bacon Fat Wash Campri

Save rendered bacon fat in a freezer safe container. Add 1-1/2 cups (375mL) Campari for every 1/2 cup (125mL) bacon fat and freeze for at least 24 hours or up to 3 days. Strain through a fine mesh cheesecloth-lined strainer before using. Refrigerate Bacon Fat Wash Campri when not in use.
