Vegetable and sausage soup

Ingredients

  • 15 ml (1 tbsp.) olive oil
  • 1 65g package of duBreton Appalachian Treasure Dry Sausage
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 leek, chopped
  • 2 celery sticks, chopped
  • 2 carrots, cut into rounds
  • 2 parsnips, cut into rounds
  • 500 ml (2 cups) diced rutabaga
  • 1 796 ml (28 oz) tin diced tomatoes
  • 5 litre (6 cups) vegetable broth
  • 1 litre (4 cups) spinach
  • Ground salt and pepper

Preparations

  1. Using a large saucepan, heat oil over medium heat and sauté slices of dry sausage with the vegetables for 10 minutes.
  2. Add the tomatoes and the broth. Bring to a boil and simmer for 20 minutes.
  3. Cut sausage into strips.
  4. Add the spinach and the dry sausage strips, stir and adjust seasoning.
