Butternut squash gnocchi with sausage

  • 500g of gnocchi
  • 1/2 Butternut squash, peeled and cut into cubes
  • Meat from 4 DuBreton mild Italian sausages, broken into pieces
  • 60ml (1/4 cup) of butter
  • A few sage leaves
  • Grated pecorino or parmesan cheese


  1. Preheat the oven to 425 °F.
  2. Place the gnocchi, squash cubes, and sausage meat on a baking sheet. Drizzle with olive oil, season with salt and pepper. Bake in the oven for 20-25 minutes.
  3. In a skillet over medium heat, add the butter. Melt it, then add the sage leaves and cook for 1-2 minutes. Remove and set aside the butter.
  4. Serve the gnocchi, topped with the butter, grated cheese, and sage leaves.
