Meatball banh mi

Boulette Banh mi

Ingredients

  • 1 pound duBreton ground pork organic or rustic farm pork (1 pkg)
  • 3 green onions diced 
  • 1/2 cilantro minced 
  • 6 garlic gloves minced 
  • 2 tablespoons fish sauce
  • 1 tablespoon sriracha (or any chili)
  • 2 tablespoons sugar 
  • 3 tablespoons oil 
  • 1 tablespoon corn starch 
  • Salt 
  • Pepper 

 

 

Pickled veggies : 

  •  1 large carrot peeled and julienned
  •  1 daikon peeled and julienned 
  • 1/2 cup rice vinegar 
  • 3 tablespoons sugar 
  • 1/4 cup water 
  • Salt for taste 

 

Spicy mayo :

  • 1/2 kewpie mayonnaise 
  • 2 tablespoons sriracha (or any chili)

 

Banh mi :

  • Baguette
  • Cilantro 
  • Jalapeños

Preparations

  1. In a large bowl add all ingredients and mix throughly. 
  2. Form meatballs to small medium size and set in fridge for 10-15 minutes. 
  3. In a large pan on medium high heat, add meatballs. Cover and constantly rotate meat meatballs for about 12 minutes or until meatballs are fully cooked. 
  4. Set aside to cool down. 

 

Pickled veggies : 

  1. Combine all ingredients, mix throughly and let sit in fridge until ready to assemble banh mi. 

 

Spicy mayo :

  1. Combine all ingredients, mix and set in fridge until ready to assemble banh mi.

 

Banh mi :

  1. Toast baguette.
  2. Evenly spread the spicy mayo.
  3. Add meatballs, pickled veggies, cilantro, jalapeños and enjoy!
